Brioche and Wild Mushroom Stuffing

This provides a great contrasting side dish for a main course such as chicken wrapped in prosciutto.


  • 50g Butter
  • 2 Stalks Celery
  • 500g Mixed mushrooms
  • 8 slices Brioche Pasquier Sliced Brioche Loaf
  • 100ml Chicken Stock
  • Salt and Black Pepper


  1. Pre-heat oven to 180oCĀ 
  2. Lightly butter a large baking dish and set aside. Melt 2 tablespoons butter in a pan medium-high heat.
  3. Finely chop celery and cook in butter until soft, about 3 minutes.
  4. Add mushrooms, salt and pepper then brown for about 8 minutes.
  5. Remove from heat and toss with remaining ingredients. Transfer to prepared dish, dot with remaining butter, and bake until heated through and top is golden, 30 to 40 minutes.
