Goats Cheese and Brioche Salad

A light lunch using goats cheese, which perfectly compliments the sweetness of brioche.

For a twist, dice the brioche and toast in a dry pan, and dice the cheese, then toss with the salad.


  • 6 slices Brioche Pasquier Slice Brioche Loaf
  • 1 bag Rocket
  • 1 punnet Cherry Tomatoes
  • 1 log Goat's Cheese
  • 6tbsp Olive Oil
  • Thyme


  1. Preheat your oven to gas mark 4, 180°C, 350°F.
  2. Cut each slice in half square then in half diagonally.
  3. Add a slice of goat cheese on each piece of brioche.
  4. Pour the olive oil on top of each piece and finish with a bit of thyme.
  5. Put in the oven for 4 or 5 minutes until the cheese is melted and golden.
  6. Meanwhile, Slice the tomatoes in half, and mix with the rocket. Dress with a little olive oil.

Ready to eat
