Smoked Salmon Eggs Benedict on Toasted Brioche

A delightful twist on a classic breakfast recipe. 


  • 2 slices Brioche Pasquier Sliced Brioche Loaf
  • 1 Egg
  • 2tbsp Milk
  • 1tbsp Butter
  • 100g Smoked Salmon
  • 1 tbsp Hollandaise Sauce


  1. Toast the brioche and cut in half.
  2. Boil a pan of water and add the vinegar.
  3. Stir the water quickly, then crack an egg and drop into the water.
  4. Cook the eggs whilst stirring for a few minutes, until just firm.
  5. Place the toast onto a plate and top with the smoked salmon.
  6. Place the poached egg on top and spoon on the hollandaise sauce.
